Instructions

- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Beat Eggs and Sugars: In a large bowl, beat eggs with granulated and brown sugars until light and fluffy.
- Combine Wet Ingredients: Slowly add oil, applesauce, and vanilla to the egg mixture, mixing until smooth.
- Fold in Dry Ingredients: Gradually fold in the dry ingredients until just combined.
- Add Zucchini and Nuts: Stir in grated zucchini and nuts if using.
- Bake: Pour batter into the prepared pan and bake for 35–40 minutes for a 9×13-inch pan or 30–35 minutes for round pans, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Cool completely before serving or frosting.
