Pasta:

  • 12 oz rotini or bowtie pasta

Salad:

  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn (fresh, canned, or thawed frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Dressing:

  • 1/2 cup ranch dressing
  • 2 tablespoons barbecue sauce
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook Pasta: Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
