Ingredients:

  • 1 tablespoon olive oil
  • 1 small yellow onion (diced)
  • 2 garlic cloves (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon chili powder
  • ½ teaspoon ground coriander
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 can (4 oz) diced green chilies
  • 2 cans (15 oz each) white beans (drained and rinsed)
  • 2 ½ cups cooked shredded chicken
  • 3 cups low-sodium chicken broth
  • ½ cup frozen corn
  • ½ cup sour cream
  • ¼ cup heavy cream or half-and-half
  • juice of 1 lime
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 4–5 minutes until soft and translucent.
  2. Stir in the garlic and cook for 1 minute until fragrant.
  3. Add the cumin, oregano, chili powder, coriander, salt, and pepper, and stir to coat the onions.
  4. Add the green chilies, white beans, shredded chicken, chicken broth, and corn. Bring the mixture to a boil, then reduce heat and simmer uncovered for 20 minutes to allow the flavors to blend.
  5. Stir in the sour cream, heavy cream, and lime juice. Simmer for 5 more minutes, stirring occasionally.
  6. Remove from heat, garnish with cilantro, and serve warm.

Notes

  • For a thicker chili, mash some of the beans before adding the sour cream.
  • Rotisserie chicken works great for this recipe.
  • Top with shredded cheese, tortilla strips, or avocado if desired.
