Instructions
- Heat Olive Oil: In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent, about 3–4 minutes.
- Sauté Aromatics: Add garlic, green chiles, cumin, oregano, chili powder, coriander, and black pepper. Cook until fragrant, about 1–2 minutes.
- Add Chicken and Beans: Stir in shredded chicken, white beans, and chicken broth. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes.
- Finish and Serve: Remove from heat and stir in sour cream, half-and-half, and lime juice. Warm through without boiling. Adjust seasoning with salt. Serve hot, topped with cilantro, cheese, and tortilla chips.
