For the Casserole:
- 1 pound ground beef
- 1 small onion, chopped
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
- 2 cups shredded cheddar cheese
- 3 cups Fritos corn chips, crushed slightly
- 1/2 cup sour cream

- Green onions

Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the Beef: In a large skillet over medium heat, cook the ground beef and chopped onion until browned. Drain excess grease.
- Season the Beef: Add the taco seasoning and water, then stir in the black beans and Rotel. Simmer for 5 minutes.
- Layer the Casserole: Spread half of the Fritos in the baking dish, then add the beef mixture. Top with sour cream and cheese. Sprinkle remaining Fritos on top.
- Bake: Bake for 15-20 minutes until cheese is melted and bubbly.
- Serve: Cool slightly and add your favorite toppings before serving.
