Vegetarian Paella:
- 2 tablespoons olive oil
- 1 small onion (chopped)
- 3 garlic cloves (minced)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 cup cherry tomatoes (halved)
- 1 cup green beans (trimmed and halved)
- 1 cup artichoke hearts (canned or marinated, quartered)
- 1 cup arborio or short-grain rice
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon turmeric or saffron threads
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups vegetable broth (warm)
- 1/2 cup frozen peas
- lemon wedges and chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet. Add onion, cook until softened.
- Stir in garlic, bell peppers, green beans. Add cherry tomatoes, artichoke hearts.
- Add rice, paprika, turmeric/saffron, salt, pepper. Toast rice, pour in broth.
- Simmer for 15-18 minutes without stirring. Add peas in last 5 minutes.
- Remove from heat, let rest. Garnish with parsley, lemon wedges.

- Use saffron for authentic flavor, turmeric is a budget-friendly option.
- Avoid stirring rice to achieve a crusty bottom layer (socarrat).
