Ground Beef Mixture:
- 1/2 pound lean ground beef
- 1 block (14 oz) extra-firm tofu, pressed and crumbled
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- 1/4 cup low-sodium soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon crushed red pepper flakes (optional)
Additional Ingredients:
- 2 cups cooked rice (white or brown)
- 1 cup shredded carrots
- 1 cup steamed broccoli
- 2 green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- Prepare Ground Beef Mixture: Heat sesame oil in a large skillet over medium heat. Add ground beef and cook until browned. Add garlic and ginger, cook briefly. Stir in crumbled tofu and cook until lightly browned.
- Make Sauce: Whisk together soy sauce, hoisin sauce, rice vinegar, honey, and red pepper flakes. Pour over the beef-tofu mixture, stir, and cook until heated through.
- Assemble Bowls: Divide rice into bowls, top with the beef-tofu mixture, shredded carrots, steamed broccoli, green onions, and sesame seeds.
Notes
- You can swap ground beef with ground turkey or go fully vegetarian by doubling the tofu.
