Ground Beef Mixture:

  • 1/2 pound lean ground beef
  • 1 block (14 oz) extra-firm tofu, pressed and crumbled
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon crushed red pepper flakes (optional)

Additional Ingredients:

  • 2 cups cooked rice (white or brown)
  • 1 cup shredded carrots
  • 1 cup steamed broccoli
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Prepare Ground Beef Mixture: Heat sesame oil in a large skillet over medium heat. Add ground beef and cook until browned. Add garlic and ginger, cook briefly. Stir in crumbled tofu and cook until lightly browned.
  2. Make Sauce: Whisk together soy sauce, hoisin sauce, rice vinegar, honey, and red pepper flakes. Pour over the beef-tofu mixture, stir, and cook until heated through.
  3. Assemble Bowls: Divide rice into bowls, top with the beef-tofu mixture, shredded carrots, steamed broccoli, green onions, and sesame seeds.

Notes

  • You can swap ground beef with ground turkey or go fully vegetarian by doubling the tofu.
