- ½ cup dark chocolate chunks or chips
Mascarpone Frosting:
- 4 oz mascarpone cheese
- ½ cup heavy cream
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp coffee liqueur (optional)
- cocoa powder, for dusting
Instructions
- Preheat oven: Preheat oven to 375°F (190°C).
- Mix dry ingredients: Whisk flour, baking powder, baking soda, and salt.
- Prepare cookie dough: Combine butter, espresso powder, sugars; add egg and vanilla. Fold in dry ingredients and chocolate.
- Bake cookies: Drop dough on a baking sheet and bake for 10–13 minutes.
- Make frosting: Whip mascarpone, cream, sugar, vanilla, and coffee liqueur until stiff.
- Frost cookies: Pipe or spread frosting on cooled cookies and dust with cocoa powder.
