Description

Cookie Dough:

  • 2 tbsp espresso powder (or instant coffee)
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup dark chocolate chunks or chips

Mascarpone Frosting:

  • 4 oz mascarpone cheese
  • ½ cup heavy cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp coffee liqueur (optional)
  • cocoa powder, for dusting

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C).
  2. Mix dry ingredients: Whisk flour, baking powder, baking soda, and salt.
  3. Prepare cookie dough: Combine butter, espresso powder, sugars; add egg and vanilla. Fold in dry ingredients and chocolate.
  4. Bake cookies: Drop dough on a baking sheet and bake for 10–13 minutes.
  5. Make frosting: Whip mascarpone, cream, sugar, vanilla, and coffee liqueur until stiff.
  6. Frost cookies: Pipe or spread frosting on cooled cookies and dust with cocoa powder.
