  • 1 packet taco seasoning
  • 1/3 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt

Layering:

  • 6 small flour tortillas, cut into quarters
  • 2 cups shredded Mexican blend cheese
  • 1/2 cup sour cream

Garnish:

  • Chopped green onions and cilantro

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook Beef Mixture: Brown ground beef and onion in a skillet, then add taco seasoning, water, black beans, Rotel, garlic powder, chili powder, and salt. Simmer for 5 minutes.
  3. Layer Casserole: Alternate layers of tortillas, beef mixture, sour cream, and cheese in the baking dish, ending with a cheese layer on top.
  4. Bake: Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes until cheese is melted and bubbly.
  5. Serve: Let rest for 5 minutes, garnish with green onions and cilantro, then serve.
