Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1/3 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
Layering:
- 6 small flour tortillas, cut into quarters
- 2 cups shredded Mexican blend cheese
- 1/2 cup sour cream
Garnish:
- Chopped green onions and cilantro
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook Beef Mixture: Brown ground beef and onion in a skillet, then add taco seasoning, water, black beans, Rotel, garlic powder, chili powder, and salt. Simmer for 5 minutes.
- Layer Casserole: Alternate layers of tortillas, beef mixture, sour cream, and cheese in the baking dish, ending with a cheese layer on top.
- Bake: Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes until cheese is melted and bubbly.
- Serve: Let rest for 5 minutes, garnish with green onions and cilantro, then serve.

- For a gluten-free option, use corn tortillas.
