For the Chili:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey or beef
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup frozen corn

For the Casserole:

  • 2 medium sweet potatoes, peeled and diced
  • ½ cup shredded cheddar cheese (optional)
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Sauté onion and garlic: In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté for 2–3 minutes until softened.
  3. Cook the meat: Add the ground turkey (or beef) to the skillet and cook until browned. Add chili powder, cumin, smoked paprika, salt, and pepper.
  4. Add remaining chili ingredients: Stir in black beans, diced tomatoes, corn, and sweet potatoes. Let simmer for 5–7 minutes.
  5. Transfer to baking dish: Transfer the mixture to a greased 9×13-inch baking dish. Cover with foil and bake for 25–30 minutes until sweet potatoes are tender.
  6. Add cheese: Remove foil, sprinkle with cheese (if using), and bake for an additional 5–10 minutes until cheese melts.
  7. Garnish and serve: Garnish with chopped cilantro and serve warm.

Notes

  • For a vegetarian version, omit the meat and add an extra can of beans.
  • This dish can be made ahead and reheated for easy weeknight meals.
