Description

This Sweet Chili Chicken Stir-Fry is a delicious and easy Asian-inspired dish that combines tender chicken with crisp vegetables in a sweet and spicy sauce. Serve it over jasmine rice for a satisfying meal.

Chicken Stir-Fry:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon ground ginger (optional)

For Garnish and Serving:

  • sesame seeds
  • chopped green onions
  • cooked jasmine rice

Instructions

  1. Cook the Chicken: Heat oil in a large skillet or wok and cook chicken until browned and cooked through. Set aside.
  2. Prepare Vegetables: In the same skillet, stir-fry broccoli, bell pepper, and snap peas until tender-crisp.
  3. Make the Sauce: Whisk together sweet chili sauce, soy sauce, rice vinegar, garlic, and ginger. Add cornstarch slurry.
  4. Combine and Serve: Return chicken to the skillet, pour in the sauce, and cook until thickened. Garnish with sesame seeds and green onions. Serve over jasmine rice.

  • You can add mushrooms or carrots for more variety.
  • For a spicier kick, stir in sriracha or crushed red pepper flakes.
