Chicken Stir-Fry:
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch mixed with 1 tablespoon water
- 1 teaspoon garlic, minced
- 1/2 teaspoon ground ginger (optional)
For Garnish and Serving:
- sesame seeds
- chopped green onions
- cooked jasmine rice
Instructions
- Cook the Chicken: Heat oil in a large skillet or wok and cook chicken until browned and cooked through. Set aside.
- Prepare Vegetables: In the same skillet, stir-fry broccoli, bell pepper, and snap peas until tender-crisp.
- Make the Sauce: Whisk together sweet chili sauce, soy sauce, rice vinegar, garlic, and ginger. Add cornstarch slurry.
- Combine and Serve: Return chicken to the skillet, pour in the sauce, and cook until thickened. Garnish with sesame seeds and green onions. Serve over jasmine rice.

- You can add mushrooms or carrots for more variety.
- For a spicier kick, stir in sriracha or crushed red pepper flakes.
