Description

These stuffed mushrooms make a delicious and elegant appetizer perfect for parties or cozy dinners. Filled with a savory mixture of sautéed mushroom stems, garlic, onion, breadcrumbs, Parmesan, and cream cheese, then baked to golden perfection, they offer a rich, creamy flavor with a satisfying texture. This vegetarian recipe is easy to prepare and can be made ahead for convenience.

Ingredients

Scale

For the Mushrooms

  • 16 large white mushrooms, stems removed and finely chopped

For the Filling

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • 1/2 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 4 ounces cream cheese, softened
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

For Baking

  • Cooking spray or additional olive oil for greasing

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper to prevent sticking.
  2. Prepare mushrooms: Clean the mushroom caps gently with a damp paper towel to remove any dirt. Remove the stems and finely chop them, setting them aside for the filling.
  3. Sauté filling ingredients: Heat olive oil in a skillet over medium heat. Add the chopped mushroom stems, minced garlic, and finely chopped onion. Sauté for about 5–7 minutes until softened and most of the moisture has evaporated, stirring occasionally for even cooking.
  4. Mix filling: Remove the skillet from heat and allow the mixture to cool slightly. In a medium bowl, combine the sautéed mushroom mixture with breadcrumbs, grated Parmesan cheese, softened cream cheese, chopped fresh parsley, dried thyme, salt, and black pepper. Mix thoroughly until well incorporated.
  5. Stuff mushrooms: Using a spoon, fill each mushroom cap with the prepared mixture, pressing gently to pack the filling firmly.
  6. Bake: Arrange the stuffed mushrooms on the prepared baking sheet and bake in the preheated oven for 18–20 minutes, or until the tops are golden brown and the mushrooms are tender.
  7. Serve: Remove from the oven and serve the stuffed mushrooms warm as a delightful appetizer or party snack.

Notes

  • You can prepare the stuffed mushrooms ahead of time and refrigerate them until ready to bake, making party prep easier.
  • For a meaty variation, add crumbled cooked sausage to the filling mixture before stuffing.
  • To achieve a crispier top, sprinkle a little extra grated Parmesan cheese over the mushrooms before baking.
