  • 2 cups Golden Oreos (crushed)

For the cheesecake filling:

  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup fresh strawberry purée (blended and strained)
  • red food coloring (optional)

For the whipped topping:

  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

For the shortcake crumble topping:

  • 1/2 cup Golden Oreos (crushed)
  • 1/2 cup freeze-dried strawberries (crushed)
  • 2 tablespoons unsalted butter (melted)

Instructions

  1. Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.
  2. Mix crushed Golden Oreos with melted butter. Press into the pan for the crust. Bake for 10 minutes and cool.
  3. Beat cream cheese and sugar until smooth. Add sour cream, vanilla, eggs, strawberry purée, and food coloring. Pour over crust.
  4. Bake for 55-65 minutes until set but slightly jiggly. Cool, then refrigerate for 4 hours.
  5. Make whipped topping by beating cream, sugar, and vanilla until stiff. Spread over cheesecake.
  6. For crumble topping, mix ingredients and sprinkle over whipped topping before serving.
