- 1/3 cup honey or sugar
For the Popsicles:
- 2 cups fresh strawberries (hulled and halved)
- 1/2 cup freshly squeezed lemon juice (about 3–4 lemons)
- 1/2 cup cold water (for blending)
Instructions
- Prepare the Simple Syrup: In a small saucepan, combine 1/2 cup water and honey (or sugar) over medium heat, stirring until dissolved. Let cool.
- Blend the Ingredients: In a blender, combine strawberries, lemon juice, cooled syrup, and 1/2 cup cold water. Blend until smooth.
- Adjust Sweetness: Taste the mixture and adjust sweetness if needed.
- Freeze: Pour the mixture into popsicle molds, insert sticks, and freeze for at least 6 hours.
- Release and Enjoy: To release, run warm water over the molds for a few seconds before enjoying your popsicles.
Notes
- For a chunkier texture, pulse the strawberries instead of blending.
