Instructions

  1. Cheesecake Filling: In a medium bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Gently fold in the diced strawberries.
  2. Assembly: Lay an egg roll wrapper on a clean surface with a corner facing you (diamond shape). Spoon 2 tablespoons of the cheesecake mixture into the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing the edge with a dab of water.
