Cake:

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour, divided
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 cups fresh strawberries, diced and lightly tossed with 2 tablespoons flour

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C). Grease and flour a 10-inch Bundt pan.
  2. Cream Butter and Sugar: In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 3–5 minutes.
  3. Add Eggs: Add eggs one at a time, beating well after each addition.
  4. Combine Dry Ingredients: In a separate bowl, whisk together 2 3/4 cups of the flour, baking soda, and salt.
  5. Mix Batter: Add the dry ingredients to the butter mixture alternately with the buttermilk, beginning and ending with the flour mixture. Stir in the vanilla extract.
  6. Add Strawberries: Gently fold in the diced strawberries that have been tossed in the remaining 1/4 cup flour.
  7. Bake: Pour the batter into the prepared Bundt pan and smooth the top. Bake for 70–80 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Let the cake cool in the pan for 15 minutes, then invert onto a wire rack to cool completely. Dust with powdered sugar before serving if desired.
