- 1 baguette (sliced into 1/2-inch pieces)
- 2 tablespoons olive oil
For the Steak:
- 1 pound flank steak or sirloin (room temperature)
- Salt and pepper to taste
- 1 tablespoon butter
For the Horseradish Cream:
- 1/2 cup sour cream
- 2 tablespoons prepared horseradish
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon chopped fresh chives (plus more for garnish)
- Arugula or baby greens (optional)

- Preheat the Oven: Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet, brush with olive oil, and toast for 6–8 minutes until golden and crisp.
- Prepare the Steak: Season the steak with salt and pepper. Sear in a skillet over medium-high heat with butter for 3–4 minutes per side for medium-rare. Let it rest for 10 minutes before slicing thinly.
- Make the Horseradish Cream: Mix sour cream, horseradish, Dijon mustard, lemon juice, and chives in a bowl until well combined.
- Assemble: Spread horseradish cream on each crostini, top with a slice of steak, and garnish with chives and arugula if desired. Serve immediately.
Notes
- You can make the horseradish cream a day ahead and store it in the fridge.
- Swap sour cream for crème fraîche or Greek yogurt if preferred.
