Description

A mouthwatering recipe for Spicy Vinegar Chicken over Tomatoes that combines tender, flavorful chicken with a tangy, spicy vinegar sauce served atop fresh tomatoes. Perfect for a delicious and impressive main course!

Ingredients

Scale

Ingredients:

  • 3 ½ to 4 lb bone-in, skin-on chicken pieces (legs, thighs, or a mix)
  • kosher salt
  • freshly ground black pepper
  • 2 tablespoons olive oil plus extra for drizzling
  • 1 ½ teaspoons crushed red pepper flakes plus extra for serving
  • ½ cup white distilled vinegar
  • ⅓ cup water
  • 1 medium red or yellow onion thinly sliced
  • 4 cloves garlic crushed
  • 1 lb ripe tomatoes thinly sliced

Instructions

  1. Pat the chicken dry and season: Generously season the chicken with salt and pepper.
  2. Brown the chicken: Heat olive oil in a large pot, brown the chicken, then transfer to a plate.
  3. Cook aromatics: Add garlic and red pepper flakes to the pot, then add sliced onion and cook until softened.
  4. Simmer chicken: Return chicken to the pot, add vinegar, water, salt, and pepper. Simmer until fully cooked and sauce thickens.
  5. Prepare tomatoes: Arrange tomatoes and remaining onion on a platter, season with salt.
  6. Assemble and serve: Place chicken over tomatoes, pour sauce and cooked onions on top. Drizzle with olive oil, sprinkle with salt, red pepper flakes, and black pepper.

Notes

  • This dish can be made a few hours in advance and served at room temperature for easy entertaining.
  • Leftovers make a great base for soup—just shred chicken, add broth, and simmer with fresh herbs.
