- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
For the Sauce:
- 1 small onion (finely chopped)
- 3 garlic cloves (minced)
- 1 tablespoon fresh ginger (grated)
- 1–2 tablespoons red curry paste (to taste)
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup or brown sugar
- 1 (13.5 oz) can full-fat coconut milk
- 1 teaspoon lime juice
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt to taste
- Chopped cilantro and lime wedges for garnish
- Cooked jasmine rice for serving
Instructions
- Prepare Tofu: Press tofu, cube, and coat with cornstarch.
