Description

This Spicy Cowboy Queso is a hearty and flavorful cheese dip with a kick, perfect for parties or game day gatherings. Made with ground beef or chorizo, jalapeños, and a blend of cheeses, it’s a Tex-Mex favorite that will disappear fast!

  • 1 tablespoon butter
  • 1/2 pound ground beef or chorizo
  • 1/2 small yellow onion (finely diced)
  • 1 jalapeño (seeded and minced)
  • 1 clove garlic (minced)
  • 1 can (10 oz) diced tomatoes with green chilies (drained)
  • 8 oz cream cheese (cubed)
  • 1 cup whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste

Garnish:

  • Chopped green onions or cilantro for garnish (optional)

Instructions

  1. Cook the Meat: In a large skillet over medium heat, melt butter and cook ground beef or chorizo until browned and fully cooked, breaking it up as it cooks. Drain excess fat if needed.
  2. Sauté Aromatics: Add onion and jalapeño, sauté for 3–4 minutes until soft. Stir in garlic and cook for 30 seconds until fragrant.
  3. Add Ingredients: Stir in drained tomatoes, cream cheese, and milk. Stir continuously until the cream cheese is melted and mixture is smooth.
  4. Melt Cheese: Reduce heat to low, gradually stir in shredded cheddar cheese a handful at a time until melted. Season with chili powder, cumin, salt, and pepper.
  5. Serve: Keep warm on low heat or transfer to a slow cooker. Garnish with green onions or cilantro and serve with tortilla chips.

  • You can add black beans, corn, or hot sauce for extra flavor and texture.
