- 1 tablespoon butter
- 1/2 pound ground beef or chorizo
- 1/2 small yellow onion (finely diced)
- 1 jalapeño (seeded and minced)
- 1 clove garlic (minced)
- 1 can (10 oz) diced tomatoes with green chilies (drained)
- 8 oz cream cheese (cubed)
- 1 cup whole milk
- 2 cups shredded sharp cheddar cheese
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- Salt and pepper to taste
Garnish:
- Chopped green onions or cilantro for garnish (optional)
Instructions
- Cook the Meat: In a large skillet over medium heat, melt butter and cook ground beef or chorizo until browned and fully cooked, breaking it up as it cooks. Drain excess fat if needed.
- Sauté Aromatics: Add onion and jalapeño, sauté for 3–4 minutes until soft. Stir in garlic and cook for 30 seconds until fragrant.
- Add Ingredients: Stir in drained tomatoes, cream cheese, and milk. Stir continuously until the cream cheese is melted and mixture is smooth.
- Melt Cheese: Reduce heat to low, gradually stir in shredded cheddar cheese a handful at a time until melted. Season with chili powder, cumin, salt, and pepper.
- Serve: Keep warm on low heat or transfer to a slow cooker. Garnish with green onions or cilantro and serve with tortilla chips.
Notes
- You can add black beans, corn, or hot sauce for extra flavor and texture.
- For a smoky twist, stir in a dash of chipotle powder or smoked paprika.
