Puff Pastry:
- 2 sheets puff pastry, thawed
Filling:
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 10 ounces frozen spinach, thawed and drained well
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh dill, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1 egg, lightly beaten for egg wash
- sesame seeds, optional for topping
Instructions
- Preheat the Oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Sauté Onion and Garlic: Heat olive oil in a skillet over medium heat. Sauté onion until soft, about 5 minutes. Add garlic and cook for 1 minute.
- Mix Spinach Filling: Stir in spinach and cook until moisture evaporates. Remove from heat and cool slightly. In a bowl, combine the spinach mixture with feta, Parmesan, dill, oregano, salt, and pepper.
- Prepare Pastry: Roll out one puff pastry sheet on a floured surface. Spread half the spinach filling on the sheet. Roll up the pastry and slice into rounds. Repeat with the second pastry sheet and filling.
- Bake Swirls: Arrange swirls on the baking sheet, brush with egg wash, and sprinkle sesame seeds if desired. Bake for 20-25 minutes until golden brown and puffed.
- Serve: Serve warm or at room temperature.
