Description

These Spanakopita Puff Pastry Swirls are a delightful twist on the classic Greek spinach pie. Flaky puff pastry is filled with a savory mixture of spinach, feta, and herbs, then rolled into bite-sized swirls for a perfect appetizer or snack.

Puff Pastry:

  • 2 sheets puff pastry, thawed

Filling:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and drained well
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh dill, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Other:

  • 1 egg, lightly beaten for egg wash
  • sesame seeds, optional for topping

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Sauté Onion and Garlic: Heat olive oil in a skillet over medium heat. Sauté onion until soft, about 5 minutes. Add garlic and cook for 1 minute.
  3. Mix Spinach Filling: Stir in spinach and cook until moisture evaporates. Remove from heat and cool slightly. In a bowl, combine the spinach mixture with feta, Parmesan, dill, oregano, salt, and pepper.
  4. Prepare Pastry: Roll out one puff pastry sheet on a floured surface. Spread half the spinach filling on the sheet. Roll up the pastry and slice into rounds. Repeat with the second pastry sheet and filling.
  5. Bake Swirls: Arrange swirls on the baking sheet, brush with egg wash, and sprinkle sesame seeds if desired. Bake for 20-25 minutes until golden brown and puffed.
  6. Serve: Serve warm or at room temperature.
