Spaghetti:
- 12 ounces spaghetti
Sun-Dried Tomato Cream Sauce:

- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 4 cups fresh spinach
- 1/4 cup fresh basil, chopped
- Extra Parmesan for serving
Instructions
- Cook Spaghetti: Cook spaghetti in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
- Prepare Sauce: In a large skillet, heat olive oil and cook garlic. Add sun-dried tomatoes, then pour in heavy cream. Simmer gently and add Parmesan, red pepper flakes, salt, and black pepper.
- Add Spinach and Combine: Add spinach to the sauce and cook until wilted. Toss in the cooked spaghetti, adding reserved pasta water as needed. Stir in fresh basil.
- Serve: Remove from heat and serve warm, topped with extra Parmesan.
