Spaghetti:

  • 12 ounces spaghetti

Sun-Dried Tomato Cream Sauce:

  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 4 cups fresh spinach
  • 1/4 cup fresh basil, chopped
  • Extra Parmesan for serving

Instructions

  1. Cook Spaghetti: Cook spaghetti in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. Prepare Sauce: In a large skillet, heat olive oil and cook garlic. Add sun-dried tomatoes, then pour in heavy cream. Simmer gently and add Parmesan, red pepper flakes, salt, and black pepper.
  3. Add Spinach and Combine: Add spinach to the sauce and cook until wilted. Toss in the cooked spaghetti, adding reserved pasta water as needed. Stir in fresh basil.
  4. Serve: Remove from heat and serve warm, topped with extra Parmesan.
