- 1 can (14.75 oz) pink salmon (drained, bones and skin removed)
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper (optional)
- 1/2 cup cornmeal
- 1/4 cup all-purpose flour
- 1 large egg
- 2 tablespoons mayonnaise
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- vegetable oil (for frying)
Instructions
- In a large bowl, combine the salmon, onion, bell pepper (if using), cornmeal, flour, egg, mayonnaise, Worcestershire sauce, garlic powder, salt, and pepper. Mix until fully combined but not overworked.
- Form the mixture into 6 to 8 equal-sized patties.
- Heat about 1/4 inch of vegetable oil in a skillet over medium heat.
- Once the oil is hot, gently place the patties in the pan and cook for 3 to 4 minutes per side, or until golden brown and crispy.
- Drain on paper towels and serve hot.
Notes
- These patties are great served with tartar sauce, hot sauce, or a side of grits or coleslaw.
- You can substitute crushed saltines or breadcrumbs for the cornmeal for a different texture.
