Description

Indulge in this comforting and hearty dish of smothered chicken with cheesy mashed potatoes. Tender chicken breasts smothered in a rich mushroom gravy served over creamy, cheesy mashed potatoes.

Ingredients

Scale

For the Chicken:

  • 4 boneless skinless chicken breasts
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium yellow onion, sliced
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons flour
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme

For the Cheesy Mashed Potatoes:

  • 2 pounds russet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Season the Chicken: Season chicken breasts with paprika, garlic powder, onion powder, salt, and pepper. Sear in a skillet until golden.
  2. Prepare the Gravy: Sauté onions, mushrooms, and garlic. Add flour, chicken broth, cream, Worcestershire sauce, and thyme. Simmer until thickened. Return chicken to skillet and simmer.
  3. Cook the Potatoes: Boil potatoes until tender. Mash with butter, milk, sour cream, and cheese. Season with salt and pepper.
  4. Serve: Plate mashed potatoes and top with chicken and mushroom gravy.

Notes

  • Add a pinch of cayenne to the gravy for a slight kick.
  • Swap in chicken thighs for extra richness, or use baby gold potatoes for creamier mash.
