Smoked Sausage, thinly sliced:

Instructions

  1. Cook Smoked Sausage: Heat olive oil in a skillet over medium heat and cook the sliced smoked sausage for 4–5 minutes until browned and heated through. Set aside.
  2. Prepare Sandwiches: Butter one side of each slice of bread. On the unbuttered side, layer cheddar, mozzarella, and gouda cheeses, dividing evenly among 4 slices. Add cooked smoked sausage over the cheese and, if desired, spread a thin layer of Dijon mustard on the top slice of each sandwich.
  3. Grill Sandwiches: Top with the remaining bread slices, buttered side out. Heat a large skillet or griddle over medium heat and cook each sandwich for 3–4 minutes per side, pressing gently, until the bread is golden and the cheese is fully melted. Slice and serve hot.
