For the Chicken:
- 2 lbs boneless, skinless chicken breasts or thighs
For the Gravy:
- 2 (0.87 oz) packets chicken gravy mix
- 1 (10.5 oz) can cream of chicken soup
- 1½ cups low-sodium chicken broth
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- 2 tablespoons cornstarch (optional, for thickening)
For Garnish:
- Chopped fresh parsley
Instructions
- Prepare the Chicken: Place chicken in the bottom of the slow cooker.
- Make the Gravy: Whisk together chicken gravy mix, cream of chicken soup, chicken broth, garlic powder, onion powder, black pepper, and thyme until smooth. Pour over the chicken.
- Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours until chicken shreds easily.
- Shred and Thicken: Shred the chicken in the slow cooker, then stir to coat in the gravy. For a thicker gravy, mix cornstarch with water, stir into the slow cooker, and cook on high for 15–20 minutes.
- Serve: Serve over mashed potatoes, rice, or biscuits. Garnish with parsley.
