Ground Beef Mixture:
- 1 pound ground beef

- 1 can (10.5 oz) condensed cheddar cheese soup
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 tablespoon ketchup
- 1 tablespoon mustard
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Garnish:
- Chopped pickles and green onions for garnish (optional)
Instructions
- Cook Ground Beef: In a skillet over medium heat, cook the ground beef and onion until browned. Add garlic and cook for 1 minute. Drain excess grease.
- Transfer to Slow Cooker: Place the beef mixture in a 4- to 6-quart slow cooker. Add potatoes, broth, cheddar soup, diced tomatoes, ketchup, mustard, paprika, salt, and pepper. Stir to combine.
- Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours until potatoes are tender.
- Finish Soup: 30 minutes before serving, stir in shredded cheese and heavy cream. Cover and cook until heated through and cheese is melted.
- Serve: Garnish with pickles and green onions if desired, and serve hot.
