- 2 large eggs
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 teaspoon vanilla extract
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin tin with liners or by greasing lightly.
- Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
- Mix Wet Ingredients: In a large bowl, whisk the eggs, pumpkin puree, oil, granulated sugar, brown sugar, and vanilla extract until smooth.
- Combine and Bake: Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix. Fill muffin cups 3/4 full with batter. Bake for 18–22 minutes until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
