Description

  • 1/4 teaspoon ground ginger

Wet Ingredients:

  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin tin with liners or by greasing lightly.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
  3. Mix Wet Ingredients: In a large bowl, whisk the eggs, pumpkin puree, oil, granulated sugar, brown sugar, and vanilla extract until smooth.
  4. Combine and Bake: Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix. Fill muffin cups 3/4 full with batter. Bake for 18–22 minutes until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
