- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Bowls:
- 2 cups cooked jasmine or brown rice
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup black beans, drained and rinsed
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
Instructions
- Prepare the Shrimp: In a bowl, toss shrimp with olive oil, garlic, paprika, cumin, salt, and pepper until coated.
- Cook the Shrimp: Sauté shrimp in a skillet over medium-high heat for 2–3 minutes per side until cooked.
- Assemble the Bowls: Layer rice, corn, black beans in serving bowls. Top with shrimp, avocado. Garnish with cilantro and serve with lime wedges.
