Description

This Sausage & Egg Keto Breakfast Casserole is a delicious and satisfying low-carb dish that’s perfect for breakfast or brunch. Packed with flavorful sausage, eggs, cheeses, and veggies, it’s easy to make and great for meal prep.

Ingredients

Scale

For the Casserole:

  • 1 pound ground breakfast sausage
  • 10 large eggs
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup diced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • chopped parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. Cook Sausage: In a skillet over medium heat, cook the sausage until fully browned, breaking it into crumbles. Drain excess grease and set aside.
  3. Prepare Egg Mixture: In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and garlic powder until well combined. Stir in the cheddar cheese, mozzarella, diced peppers, and onion. Add the cooked sausage and mix everything together.
  4. Bake: Pour the mixture into the prepared baking dish and spread evenly. Bake for 30–35 minutes or until the center is set and the top is golden.
  5. Cool and Garnish: Let cool for 5 minutes before slicing. Garnish with chopped parsley if desired.
