Egg Yolk Mixture:

Sabayon:

Instructions
- Prepare Egg Yolk Mixture: In a heatproof bowl, whisk egg yolks and sugar until light and creamy.
- Make Sabayon: Place the bowl over simmering water, gradually whisk in Marsala wine, and whisk constantly until thickened.
- Finish Sabayon: Remove from heat, continue whisking to cool slightly, then serve warm, at room temperature, or chilled over berries or with fruit and whipped cream.
Notes
- Sabayon is best enjoyed freshly made.
- For a non-alcoholic version, use sparkling grape juice or orange juice.
- Can be served over poached fruit or as a sauce for cake or tart.
