A flavorful and easy Tex-Mex side dish, Rotel Rice is a zesty combination of long grain white rice, Rotel diced tomatoes with green chilies, and aromatic seasonings. This dish is simple to prepare on the stovetop and pairs well with a variety of Mexican-inspired dishes.

Main Ingredients:
- 1 tablespoon olive oil
- 1 cup long grain white rice
- 1 can (10 oz) Rotel diced tomatoes with green chilies (undrained)
- 1 3/4 cups chicken broth or water
Seasonings:
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cumin (optional)
- Salt and pepper to taste
Garnish (optional):
- 2 tablespoons chopped fresh cilantro or green onions
Instructions
- Heat Olive Oil: In a medium saucepan over medium heat, heat olive oil.
- Toast Rice: Add rice and stir frequently for 2–3 minutes until lightly toasted.
- Add Ingredients: Add Rotel, chicken broth, garlic powder, onion powder, cumin, salt, and pepper. Bring to a boil.
- Simmer: Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
- Rest and Fluff: Remove from heat, let sit covered for 5 minutes, then fluff with a fork.
- Garnish and Serve: Garnish with cilantro or green onions if desired. Serve warm.

- Great as a Tex-Mex side dish or base for burrito bowls.
- For added flavor, sauté chopped onion or bell pepper with the rice.
- Make it spicy by using hot Rotel or adding a pinch of cayenne.
