Sweet Potatoes:

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes

Seasoning:

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme or Italian seasoning

Additional:

  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Toss Potatoes: In a large bowl, toss sweet potato cubes with olive oil, garlic, salt, pepper, and thyme until evenly coated.
  3. Roast: Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 25–30 minutes, flipping halfway through, until tender and golden brown on the edges.
  4. Add Cheese: Remove from oven and immediately sprinkle with Parmesan cheese. Toss gently to coat.
  5. Garnish and Serve: Garnish with chopped parsley if desired and serve warm.
