Sweet Potatoes:
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
Seasoning:
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme or Italian seasoning
Additional:
- 1/4 cup grated Parmesan cheese
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat oven to 425°F and line a baking sheet with parchment paper.
- Toss Potatoes: In a large bowl, toss sweet potato cubes with olive oil, garlic, salt, pepper, and thyme until evenly coated.
- Roast: Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 25–30 minutes, flipping halfway through, until tender and golden brown on the edges.
- Add Cheese: Remove from oven and immediately sprinkle with Parmesan cheese. Toss gently to coat.
- Garnish and Serve: Garnish with chopped parsley if desired and serve warm.
Notes
- For crispier potatoes, don’t overcrowd the pan.
- You can also add a pinch of red pepper flakes for a little heat.
