For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tbsp granulated sugar

For the filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the raspberry swirl:

  • 3/4 cup fresh raspberries
  • 2 tbsp sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
  2. Make the crust: Mix graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press firmly into the bottom of the pan to create the crust.
  3. Prepare the raspberry swirl: Cook raspberries, sugar, and lemon juice in a saucepan until thickened. Strain to remove seeds.
  4. Make the filling: Beat cream cheese and sugar until smooth. Add eggs, one at a time, then mix in vanilla extract and sour cream.
  5. Assemble: Pour the filling over the crust, add spoonfuls of raspberry sauce, and swirl gently with a knife.
  6. Bake: Bake for 35–40 minutes until set. Cool, then refrigerate for at least 3 hours before slicing into bars.

Notes

  • For a stronger raspberry flavor, mix some of the raspberry sauce into the cheesecake batter.
