For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 2 tbsp granulated sugar
For the filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
For the raspberry swirl:
- 3/4 cup fresh raspberries
- 2 tbsp sugar
- 1 tsp lemon juice
Instructions
- Preheat the oven: Preheat the oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
- Make the crust: Mix graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press firmly into the bottom of the pan to create the crust.
- Prepare the raspberry swirl: Cook raspberries, sugar, and lemon juice in a saucepan until thickened. Strain to remove seeds.
- Make the filling: Beat cream cheese and sugar until smooth. Add eggs, one at a time, then mix in vanilla extract and sour cream.
- Assemble: Pour the filling over the crust, add spoonfuls of raspberry sauce, and swirl gently with a knife.
- Bake: Bake for 35–40 minutes until set. Cool, then refrigerate for at least 3 hours before slicing into bars.
Notes
- For a stronger raspberry flavor, mix some of the raspberry sauce into the cheesecake batter.
- Bars can be frozen and thawed before serving.
