Cheese Blend:

  • 8 ounces shredded Oaxaca or mozzarella cheese
  • 4 ounces shredded Monterey Jack cheese

Additional:

  • 1/4 cup chopped fresh cilantro
  • Lime wedges
  • Warm tortillas or tortilla chips for serving

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Cook Chorizo: In a skillet, cook chorizo over medium heat until fully cooked. Add onion, jalapeño, and garlic. Cook until softened.
  3. Add Cheeses: Remove skillet from heat. Sprinkle Oaxaca or mozzarella and Monterey Jack cheeses over mixture.
