Dry Ingredients:
- 1 1/2 cups old-fashioned oats

- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
Wet Ingredients:
- 1/2 cup coconut oil or melted butter
- 1/2 cup pure maple syrup or honey
- 1 cup canned pumpkin puree
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup mini chocolate chips or chopped nuts (optional)
Instructions
- Preheat oven and prepare pan: Preheat oven to 350°F and line an 8×8-inch baking pan with parchment paper.
- Mix dry ingredients: In a large bowl, whisk together oats, flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Combine wet ingredients: In a separate bowl, mix melted coconut oil or butter with maple syrup, pumpkin, egg, and vanilla until smooth.
- Combine wet and dry ingredients: Add wet ingredients to dry ingredients and stir until just combined. Fold in chocolate chips or nuts, if using.
- Bake: Pour batter into the prepared pan and spread evenly. Bake for 25–30 minutes or until the center is set and a toothpick comes out clean.
- Cool and cut: Let cool completely before cutting into bars.
Notes
- For a vegan version, use a flax egg and maple syrup.
- Store bars in an airtight container at room temperature for 2 days or refrigerate for up to a week.
