Pumpkin Pudding Layer:
- 1 (3.4-ounce) package instant vanilla pudding mix
- 1 (3.4-ounce) package instant pumpkin spice pudding mix (or substitute with another box of vanilla pudding and 2 teaspoons pumpkin pie spice)
- 2 ¾ cups cold milk
- 1 cup canned pumpkin purée
Toppings:
- 2 cups whipped topping for layering
- Chopped pecans for topping
- Ground cinnamon for garnish
Instructions
- Graham Cracker Crust: In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press into a 9×13-inch dish and refrigerate.
- Cream Cheese Layer: Beat cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over crust.
- Pumpkin Pudding Layer: Whisk vanilla pudding, pumpkin spice pudding (or alternatives), milk, and pumpkin purée until thickened. Spread over cream cheese layer.
- Toppings: Layer with remaining whipped topping. Refrigerate for at least 4 hours.
- Finishing: Before serving, add chopped pecans and a dusting of cinnamon.
Notes
- If pumpkin spice pudding is unavailable, use an extra box of vanilla pudding and 2 teaspoons of pumpkin pie spice.
