Description

Pumpkin Pudding Layer:

  • 1 (3.4-ounce) package instant vanilla pudding mix
  • 1 (3.4-ounce) package instant pumpkin spice pudding mix (or substitute with another box of vanilla pudding and 2 teaspoons pumpkin pie spice)
  • 2 ¾ cups cold milk
  • 1 cup canned pumpkin purée

Toppings:

  • 2 cups whipped topping for layering
  • Chopped pecans for topping
  • Ground cinnamon for garnish

Instructions

  1. Graham Cracker Crust: In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press into a 9×13-inch dish and refrigerate.
  2. Cream Cheese Layer: Beat cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over crust.
  3. Pumpkin Pudding Layer: Whisk vanilla pudding, pumpkin spice pudding (or alternatives), milk, and pumpkin purée until thickened. Spread over cream cheese layer.
  4. Toppings: Layer with remaining whipped topping. Refrigerate for at least 4 hours.
  5. Finishing: Before serving, add chopped pecans and a dusting of cinnamon.
