Description

Wet Ingredients:

  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 1 teaspoon vanilla extract

Additional:

  • 1/4 cup mini chocolate chips or chopped dark chocolate

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together the almond flour, protein powder, baking soda, and salt.
  3. Combine wet ingredients: In another bowl, whisk the melted coconut oil, maple syrup, egg, and vanilla until smooth.
  4. Form dough: Add the wet ingredients to the dry and mix until a soft dough forms. Fold in the chocolate chips.
  5. Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet and gently flatten each into a cookie shape. Bake for 8–10 minutes, or until the edges are lightly golden.
  6. Cool: Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
