Cake:

- 3 large eggs

- 1 package (3.4 oz) instant vanilla pudding mix
Topping:
- 1 container (8 oz) whipped topping (like Cool Whip)
- 1 cup crushed pineapple (drained)
- 1/2 cup sweetened shredded coconut (optional)
- Maraschino cherries for garnish (optional)
Instructions
- Preheat oven and prepare the cake: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish. Combine cake mix, oil, eggs, crushed pineapple, water, and pudding mix. Beat until well blended. Pour into dish and bake for 30–35 minutes.
- Prepare the topping: In a bowl, fold together whipped topping, drained pineapple, and coconut if using.
- Assemble the cake: Spread the pineapple topping over the cooled cake. Refrigerate for at least 1 hour.
- Serve: Garnish with maraschino cherries if desired.

- For added flavor, mix a bit of pineapple juice into the whipped topping.
