Description

Indulge in the warm, spiced flavors of traditional German holiday baking with these delightful Pfeffernusse Cookies. These soft, chewy cookies are rolled in powdered sugar for a snowy finish, making them a perfect treat for the festive season.

Ingredients

Scale

Dry Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon finely ground black pepper

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Coating:

  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and all the spices, including black pepper.
  3. Cream butter and sugar: In a large bowl, cream the butter and brown sugar until light and fluffy.
  4. Add wet ingredients: Beat in the molasses, egg, and vanilla until well combined.
  5. Combine wet and dry: Gradually stir in the dry ingredients until a thick dough forms. Chill the dough for 30 minutes for easier handling.
  6. Form and bake: Roll the dough into 1-inch balls and place them 2 inches apart on the baking sheet. Bake for 10–12 minutes, or until puffed and just set.
  7. Cool and coat: Let cookies cool for 5 minutes on the pan, then transfer to a wire rack. While still slightly warm, roll cookies in powdered sugar. Once fully cooled, roll again for a snowy finish.
