Pecan Pie Balls:
- 2 cups finely chopped pecans
- 1 cup graham cracker crumbs
- 1 cup medjool dates (pitted and chopped)
- 1/2 cup light corn syrup or maple syrup
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smoother coating)
Instructions
- In a food processor, combine pecans, graham cracker crumbs, chopped dates, corn syrup, brown sugar, cinnamon, salt, and vanilla. Pulse until the mixture holds together when pressed.
- Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet. Refrigerate for 30 minutes to firm up.
- In a microwave-safe bowl, melt the chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
- Dip each ball into the melted chocolate and place back on the parchment. Chill until the chocolate is set, about 15–20 minutes.
