Description

These Pecan Pie Balls are a delightful no-bake treat that combines the flavors of pecan pie in a convenient, bite-sized form. Perfect for satisfying your sweet tooth with a touch of nostalgia.

Ingredients

Scale

Pecan Pie Balls:

  • 2 cups finely chopped pecans
  • 1 cup graham cracker crumbs
  • 1 cup medjool dates (pitted and chopped)
  • 1/2 cup light corn syrup or maple syrup
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother coating)

Instructions

  1. In a food processor, combine pecans, graham cracker crumbs, chopped dates, corn syrup, brown sugar, cinnamon, salt, and vanilla. Pulse until the mixture holds together when pressed.
  2. Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet. Refrigerate for 30 minutes to firm up.
  3. In a microwave-safe bowl, melt the chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
  4. Dip each ball into the melted chocolate and place back on the parchment. Chill until the chocolate is set, about 15–20 minutes.

Notes

  • Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.
  • For added texture, roll balls in finely chopped pecans before the chocolate coating.
