Description
These Peanut Butter Chocolate Chip Snowball Cookies are a delightful twist on the classic snowball cookie, with the addition of creamy peanut butter and mini chocolate chips. They are perfect for holiday gatherings or anytime you crave a sweet treat.
Ingredients
Scale
Cookie Dough:
- 1 cup unsalted butter (softened)
- 1/2 cup creamy peanut butter
- 1/2 cup powdered sugar (plus more for coating)
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup mini chocolate chips
Instructions
- Cream Together Ingredients: In a large mixing bowl, cream together the softened butter, peanut butter, and powdered sugar until light and fluffy. Add the vanilla extract and mix until combined.
- Add Dry Ingredients: Gradually add the flour and salt, mixing until a soft dough forms. Stir in the mini chocolate chips.
- Chill the Dough: Cover the dough and chill in the refrigerator for 30–45 minutes.
- Preheat and Bake: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop tablespoon-sized portions of dough and roll into balls. Place them about 1 inch apart on the prepared baking sheet. Bake for 12–14 minutes, or until the bottoms are lightly golden but the tops are still pale.
- Cool and Coat: Allow the cookies to cool for 5 minutes on the pan, then roll them in powdered sugar while still warm. Let cool completely and roll in powdered sugar again for a classic snowball finish.
Notes
- Use mini chocolate chips to help the dough hold together more easily.
- For a festive touch, roll the cookies in colored powdered sugar or mix in chopped nuts.
- Store in an airtight container for up to 1 week.
