Oat Topping:
- 1 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (cold and cut into small cubes)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Prepare fruit mixture: In a large bowl, combine peaches, blueberries, lemon juice, granulated sugar, cornstarch, and vanilla. Pour into greased baking dish.
- Make oat topping: In a separate bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add butter and mix until crumbly.
- Add topping and bake: Sprinkle oat mixture over fruit. Bake for 40-45 minutes until golden brown and bubbly.
- Serve: Allow to cool slightly before serving.
