Description

These fluffy pancakes with honey and fresh berries are a delightful breakfast option that is sure to impress. The combination of sweet honey, tart berries, and perfectly cooked pancakes will make your morning special.

Ingredients

Scale

Dry Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 3/4 cup buttermilk
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter (plus more for cooking)
  • 1 teaspoon vanilla extract

Additional:

  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup honey, for drizzling

Instructions

  1. Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Wet Ingredients: In a separate bowl, mix the buttermilk, milk, egg, melted butter, and vanilla until smooth. Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix; a few lumps are fine).

  3. Cooking: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter. Pour 1/4 cup of batter for each pancake and cook for 2–3 minutes until bubbles form on the surface. Flip and cook another 1–2 minutes until golden brown and cooked through.
  4. Serving: Serve warm stacked pancakes topped with fresh berries and a generous drizzle of honey.

Notes

  • You can substitute buttermilk with milk plus 1 tablespoon lemon juice or vinegar.
  • Add a pinch of cinnamon to the batter for extra flavor.
