For the Shrimp:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Chimichurri Sauce:
- 1 cup fresh parsley leaves
- 1/4 cup fresh cilantro leaves
- 3 cloves garlic
- 1/4 cup red wine vinegar
- 1/3 cup olive oil
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon smoked paprika
- juice of 1 lemon
Instructions
- Make the Chimichurri Sauce: In a food processor, blend parsley, cilantro, garlic, red wine vinegar, 1/3 cup olive oil, red pepper flakes, smoked paprika, and lemon juice until smooth.
- Cook the Shrimp: Season shrimp with salt and pepper. Sear in olive oil over medium-high heat for 2–3 minutes per side until cooked. Toss with half of the chimichurri sauce.
- Serve: Plate the shrimp and drizzle with remaining chimichurri sauce before serving hot.
