Ingredients
Scale
Onion Mixture:
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 3 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
Additional Ingredients:
- 12 oz uncooked pasta (e.g., fettuccine or penne)
- 4 cups beef or vegetable broth
- 1/2 cup heavy cream
- 1 cup shredded gruyère or Swiss cheese
- 1/2 cup grated parmesan cheese
- Chopped parsley (for garnish)
Instructions
- Sauté Onion Mixture: In a large pot or Dutch oven, heat butter and olive oil over medium heat. Add sliced onions, sugar, salt, and pepper. Cook, stirring frequently, for 20–25 minutes until onions are golden brown and caramelized. Stir in garlic, thyme, and balsamic vinegar; cook for 1–2 more minutes.
- Cook Pasta: Add uncooked pasta and broth to the pot. Bring to a boil, then reduce heat to medium-low. Cover and simmer, stirring occasionally, until pasta is al dente and liquid is mostly absorbed, about 10–12 minutes.
- Finish Dish: Stir in heavy cream, gruyère, and parmesan until melted and creamy. Adjust seasoning if needed.
- Serve: Serve hot, garnished with parsley and extra cheese if desired.
Notes
- For extra richness, stir in a splash of white wine with the broth.
- Use vegetarian broth to keep it meat-free.
- This dish pairs well with roasted vegetables or a green salad.
