- 2 tablespoons honey
- 2 chipotle peppers in adobo sauce (minced)
- 1 tablespoon adobo sauce (from the can)
- 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- Sear the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with spices and sear for 2-3 minutes per side. Remove and set aside.
- Cook the Rice: In the same pan, combine rice, broth, tomatoes, honey, chipotle peppers, and adobo sauce. Nestle the chicken back in, cover, and simmer for 20-22 minutes.
