  • 2 tablespoons honey
  • 2 chipotle peppers in adobo sauce (minced)
  • 1 tablespoon adobo sauce (from the can)
  • 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Sear the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with spices and sear for 2-3 minutes per side. Remove and set aside.
  2. Cook the Rice: In the same pan, combine rice, broth, tomatoes, honey, chipotle peppers, and adobo sauce. Nestle the chicken back in, cover, and simmer for 20-22 minutes.
