Instructions
- Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and chill.
- Make the filling: Beat cream cheese until smooth. Add powdered sugar and vanilla. Whip heavy cream separately, then fold into cream cheese mixture. Spread over crust and chill.
- Create the apple topping: Cook apples, butter, sugar, cinnamon, nutmeg, and lemon juice until tender. Add cornstarch slurry to thicken. Cool and spoon over chilled cheesecake.
