This Mushroom Soup Pot Roast is a comforting and hearty dish perfect for a cozy meal. Tender chuck roast is braised with mushrooms, onions, carrots, and potatoes in a savory cream of mushroom sauce.

Chuck Roast:
- 3–4 pound chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
Vegetables:
- 1 medium yellow onion, sliced
- 3 cloves garlic, minced
- 2 cups sliced mushrooms (cremini or button)
- 4–5 medium carrots, peeled and cut into chunks
- 4 medium Yukon gold potatoes, halved or quartered
Sauce:
- 1 (10.5-ounce) can condensed cream of mushroom soup
- 1 (10.5-ounce) can beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
Instructions
- Season the Chuck Roast: Season the chuck roast with salt, pepper, and garlic powder.
- Sear the Roast: In a large Dutch oven, heat olive oil and sear the roast on all sides until browned. Set aside.
- Cook Vegetables: Sauté onions, garlic, and mushrooms. Add soup, broth, Worcestershire sauce, and thyme. Return the roast to the pot.
- Braise: Add carrots and potatoes, simmer, cover, and cook on low heat for 3–3.5 hours or bake in a 300°F oven.
- Finish: Adjust seasoning and serve warm with vegetables and sauce.
Notes
- For a deeper flavor, add ½ cup red wine with the broth.
- This dish can also be made in a slow cooker on low for 8 hours.
- Leftovers are excellent the next day and freeze well.
