Egg Mixture:
- 6 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Filling:
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced cooked ham or bacon
- 1/4 cup diced bell peppers
- 1/4 cup diced onions

- Nonstick cooking spray
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Prepare the muffin tin: Lightly grease a 12-cup muffin tin with nonstick cooking spray.
- Mix the egg mixture: In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Fill the muffin cups: Divide the ham or bacon, bell peppers, and onions among the muffin cups. Pour the egg mixture over the fillings, filling each cup about 3/4 full.
- Add cheese: Sprinkle shredded cheddar cheese evenly on top.
- Bake: Bake for 18–20 minutes until set and lightly golden.
- Cool and serve: Let cool for 5 minutes before removing from the tin. Serve warm or at room temperature.
Notes
- You can substitute the ham with cooked sausage or make them vegetarian with just vegetables.
